Chocolate Chip Pan Cookies.

I needed to whip up something quick tonight because we are having a dinner guest. I had everything for chocolate chip cookies. When I really thought about it, I couldn't remember ever making plain chocolate chip cookies. I've always thrown in something else to jazz them up. Tonight I decided to make chocolate chip pan cookies (the extra baking time gave me time to finish up things for dinner and general tidying around the house).

Valentine's Day baking spree.

On Valentine's Day morning, I wanted to surprise T with pancakes and bacon. As often as I bake and have made waffles from scratch, I've never made pancakes from scratch. I admit, I just use Bisquick. I awoke to realize that we were out! eep!

I'm a smart girl, so I pulled out my very first cookbook, Betty Crocker Cookbook, Everything You Need to Know to Cook, 8th Edition. I have to say, they are the best pancakes I've ever had. Light and fluffy... usually pancakes sit like a brick in my tummy.


We spent the day outside and made this delicious lasagna from Ina Garten for dinner. It's so good. I've been nibbling at it all day.











Today I made cupcakes to take to work. They are Orange Glow Chiffon Cupcakes with butter cream icing. The cake recipe is from one of the cookbooks I received for Christmas and have mentioned before, Rose's Heavenly Cakes by Rose Levy Beranbaum. It's a light spongy cake and the orange flavor is wonderful.

Snickerdoodles.

I actually made these the first week of the year, but they were eaten so quickly that I didn't get a change to snap a photograph. I made them again tonight because I love how light they are and how they make the whole house smell delicious.
