Oh! I almost forgot, I had a chocolate soufflé with the girls last week. We also tried a Grand Marnier soufflé. Both were absolutely amazing (but pricey, $17.00 a piece). Breaking the top and pouring crème anglaise in gave off a wonderful aroma and they melted on the tongue. I can't wait to try making one again with traditional ingredients.

The Art and Soul of Baking - Sur La Table - Chocolate Chip cookies.
Yummy! I used Ghirardelli bittersweet chocolate chips and a handful of butterscotch chips. Soft and wonderful!

Chocolate soufflé.
I tried this recipe from Weight Watchers.com. As we know I'm trying to get in shape and lose weight before our wedding. The soufflé baked beautifully and from what I can tell was the correct consistency... but it had no flavor at all. My thought is that this is just one of the baked items that you can not cut back on calories. It called for light butter, fat free cream and far less sugar than a typical chocolate soufflé.
Having never had a soufflé, I can't be sure if this is normal... but I am having soufflés with the girls on Tuesday at the four star Wright's at the Biltmore. We shall see. They are known in this area for their soufflés.

NCAA games = me baking more.
I'm not a fan of basketball, especially on television. Honestly, it's the sound of the squeaking sneakers.
I decided to bake a bit today and tomorrow while T watches the games.
Today I made Millionaire's shortbread, a recipe I found on this fantastic blog, Piece of Cake: Freshly Baked Stories, Recipes and Photos. The author, Shauna, always has wonderful recipes and photographs. Her writing style is lovely and I always laugh while reading her latest posts. You can get the recipe from the link. Below are some photographs. It's a delicious dessert. I actually made it for T to take to his friend's house to have while watching today's games.

Whew! What a week and a birthday.
This week at work has been stressful. Ugh.
Nothing makes me feel better than baking. I wanted to whip something up quickly and was thumbing through one of my Weight Watchers cookbooks and came upon a recipe for Triple Chocolate Brownie Thins. The are rich but not heavy and one is just enough!

Monday was my birthday. I am so lucky to have the people I do in my life. I am incredible grateful for their generosity. T's parents sent me an extra mixer bowl for my KitchenAid Professional 600 Series six quart mixer as well as a scraper blade paddle attachment. They also sent me nine ramekins! eeeeee! I'm so excited to use them!

T gave me this beauty. Am I lucky or what? I've been snapping away and actually have a shoot this Saturday! I'm excited to get back at it!

Happy baking!
