It's been a ridiculously awful two weeks at work. I left on Friday feeling frustrated and tired and looking forward to a day off. On my way through the mall, I passed Williams-Sonoma and decided that today was the day. I was going to go in there, pay more than I probably should, and leave with the NordicWare Teacake pan I had been coveting for ages. If I was coming back to work on Sunday, I was coming back full of tiny, tiny cakes.
The pan came with a recipe that I gladly used, this being my first time making itty bitty cakes. I'll own up: I overfilled the wells, something I'm prone to doing. My muffins often come out abnormally large. Owning up again: I used the almond adaptation of the recipe, which adds almond extract along with the vanilla, but in order to not be under-almonded, I cut 1/3 c. of the flour and used 1/3 c. almond meal instead. They still came out pretty!
The recipe also included directions for an egg white and confectioners sugar glaze/icing but I figured that since I'm already deviating, why not go farther? I love apricot with almond so I made a little apricot glaze and dipped my little cakes in headfirst.
There are few better ways to wrap up a bad day than with apricot glazed almond teacakes and a cup of Sleepytime Vanilla.
These are so darling! I love almond meal. It gives such a warm flavor to things. I'm ordering this pan soon!
