Valentine's Day baking spree.

On Valentine's Day morning, I wanted to surprise T with pancakes and bacon. As often as I bake and have made waffles from scratch, I've never made pancakes from scratch. I admit, I just use Bisquick. I awoke to realize that we were out! eep!

I'm a smart girl, so I pulled out my very first cookbook, Betty Crocker Cookbook, Everything You Need to Know to Cook, 8th Edition. I have to say, they are the best pancakes I've ever had. Light and fluffy... usually pancakes sit like a brick in my tummy.


We spent the day outside and made this delicious lasagna from Ina Garten for dinner. It's so good. I've been nibbling at it all day.











Today I made cupcakes to take to work. They are Orange Glow Chiffon Cupcakes with butter cream icing. The cake recipe is from one of the cookbooks I received for Christmas and have mentioned before, Rose's Heavenly Cakes by Rose Levy Beranbaum. It's a light spongy cake and the orange flavor is wonderful.
