Chocolate Biscuit Cake

While we were in Ireland, I tried every dessert I could get my hands on that I'd never seen here. Chocolate biscuit cake was one of those.




We were driving the Slea Head Drive and had been told to stop and see the pottery at Louis Mulcahy. Amazing pottery and they happened to have a little cafe. I'd fallen hard for Irish tea, so we decided to stay for tea. When ordering I spotted this cake and asked what it was. I was told it was chocolate biscuit cake which is made with digestive biscuits. T and I were familiar with these as we often pick up the chocolate coated McVities in the British/Irish section of the grocery. The idea of these in cake form thrilled me (it's the little things in life). So we asked for a slice. In a word: amazing.

When we got home, I searched online for a recipe. It read through a few, but the only one that was like what we had eaten was this one on Epicurious. You see, it's not actually cake, it's simply a chocolate mixture used to coat digestive biscuits, then they are placed in a cake mold, chilled and then coated with melted chocolate. No actual cake involved. A small slice with tea is a perfect afternoon treat. It's rich and wonderful. Melts in your mouth wonderful, with a bit of crunch for texture.

Eight ounces of plain digestive biscuits coated with a mixture of chocolate, sugar, butter and egg that has been melted and combined in a double boiler. Place in a cake pan, refrigerate for a few hours.
 Once firm, remove from the pan and coat with melted chocolate. Refrigerate again and voila!
I let it sit on the counter while brewing my tea just to soften it enough to make it easy to eat with a fork. Delicious and simple!

    I used this recipe, but I skipped the white chocolate.

    * 1/2 teaspoon butter, for greasing pan
    * 8 ounces McVities rich tea biscuits
    * 1/2 stick (4 tablespoons) unsalted butter, softened
    * 1/2 cup granulated sugar
    * 4 ounces dark chocolate
    * 1 egg, beaten
    * 8 ounces dark chocolate, for icing
    * 1 ounce white chocolate, for decoration
